Ingredients

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 medium head of cauliflower, grated or pre-made cauliflower rice (about 4 cups)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice (optional)
  • 1 tablespoon butter (optional)

Instructions

    • Prepare the Chicken: Season the chicken breasts with onion powder, paprika, cumin, salt, and pepper.

    • Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken breasts for 6–7 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (74°C). Remove from the skillet and set aside.

    • Cook the Cauliflower Rice: In the same skillet, add the remaining tablespoon of olive oil and garlic. Sauté for 1–2 minutes until fragrant. Add the cauliflower rice and cook for 5–7 minutes, stirring occasionally, until tender and lightly golden. If using, add butter for extra flavor.

    • Assemble the Dish: Slice the cooked chicken into strips. Serve the chicken over the cauliflower rice and garnish with fresh parsley and a squeeze of lemon juice if desired.

  • You can swap the chicken breasts with thighs for a juicier option.
