Ingredients
- 1 ½ lbs boneless, skinless chicken thighs or breasts, cut into chunks
- 3 cups chicken broth
- 3 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 cup frozen peas (added at the end)
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Fresh parsley, for garnish

Prepare the Ingredients: Add chicken, broth, carrots, potatoes, celery, onion, garlic, salt, pepper, thyme, rosemary, tomato paste, and Worcestershire sauce to the slow cooker.

Cook Low & Slow: Cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender and vegetables are soft.

Thicken the Stew (Optional): If a thicker stew is desired, stir in the cornstarch slurry and cook for another 15 minutes.

Finish & Serve: Stir in frozen peas and let them warm through. Garnish with fresh parsley and serve hot.
Notes
- Swap potatoes for sweet potatoes for a slightly sweeter taste.
- For extra depth, add a splash of heavy cream at the end.
