Description

This Slow Cooker Creamy Tomato Basil Chicken is a rich, flavorful, and comforting dish perfect for busy nights. Tender chicken is slow-cooked in a creamy tomato and basil sauce, creating a restaurant-quality meal with minimal effort. Serve it over pasta, rice, or with crusty bread for a satisfying dinner!


Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or thighs
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup tomato sauce
  • ½ cup chicken broth
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried basil (or ¼ cup fresh basil, chopped)
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional, for heat)
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • 2 tbsp butter
  • Fresh basil and extra Parmesan for garnish

Instructions

    • Assemble in Slow Cooker: Add chicken, diced tomatoes, tomato sauce, chicken broth, garlic, salt, pepper, basil, oregano, and red pepper flakes to the slow cooker. Stir to combine.

    • Cook Low & Slow: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.

    • Add Cream & Cheese: Stir in heavy cream, Parmesan cheese, and butter. If a thicker sauce is desired, mix in the cornstarch slurry and cook for another 15 minutes.

    • Serve & Enjoy: Garnish with fresh basil and extra Parmesan. Serve over pasta, rice, or with crusty bread.

 

Notes

  • Swap potatoes for sweet potatoes for a slightly sweeter taste.
