Description

A creamy and delicious turkey stroganoff made with ground turkey, mushrooms, and a rich sour cream sauce, served over egg noodles.


Ingredients

  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent. Add the minced garlic and cook for an additional minute.
  2. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the sliced mushrooms, paprika, salt, and black pepper. Cook for another 5 minutes until the mushrooms are tender.
  4. In a small bowl, whisk together the flour and chicken broth until smooth. Pour this mixture into the skillet and stir well. Bring to a simmer and cook for about 3-4 minutes until slightly thickened.
  5. Reduce the heat to low and stir in the sour cream until fully combined. Cook for an additional 2 minutes, ensuring not to boil the mixture.
  6. Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
  7. Serve the creamy turkey stroganoff over the cooked egg noodles and garnish with fresh parsley.

Notes

  • For a lighter version, substitute Greek yogurt for sour cream.
