Ingredients

  • 2 cups cooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 lb cooked salmon, flaked
  • ½ cup mayonnaise (or Japanese mayo for extra flavor)
  • 1 tbsp sriracha (adjust for spice level)
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • ½ cup cream cheese, softened
  • ¼ cup green onions, chopped
  • 1 tbsp furikake seasoning
  • ½ cup shredded cheese (optional, for extra creaminess)
  • Nori sheets (for serving)

Instructions

  • Prepare the Rice: Mix warm cooked rice with rice vinegar, sugar, and salt. Spread evenly into a baking dish.
  • Make the Salmon Mixture: In a bowl, combine flaked salmon, mayonnaise, sriracha, soy sauce, sesame oil, cream cheese, and green onions. Mix well.
  • Assemble the Bake: Spread the salmon mixture evenly over the rice. Sprinkle with furikake and shredded cheese if using.
  • Bake: Preheat oven to 375°F (190°C) and bake for 15 minutes, or until bubbly and slightly golden.
  • Serve & Enjoy: Scoop onto nori sheets, roll, and enjoy like sushi!

Notes

  • Substitute salmon with canned salmon, imitation crab, or tuna for variations.
  • For a crispier top, broil for 2-3 minutes after baking.
