Description

These Brownie Cookies are everything you love about brownies—fudgy centers, crackly tops, and rich chocolate flavor—packed into a soft, chewy cookie form! With melty chocolate chips in every bite, they’re the perfect cross between a cookie and a brownie. Whether you’re baking for a party, a holiday tray, or just a late-night chocolate craving, these cookies never disappoint!

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup semisweet chocolate chips, divided
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

  • In a small saucepan or microwave-safe bowl, melt the butter with 1/2 cup of the chocolate chips until smooth. Let it cool slightly.

  • In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until light and creamy.

  • Pour in the melted chocolate mixture and stir until well combined.

  • In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.

  • Fold in the remaining 1/2 cup of chocolate chips.

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  • Bake for 9–11 minutes, or until the tops are crackly and the edges are set but the centers are still soft.

  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra fudgy cookies, don’t overbake—take them out when the centers still look slightly soft.
  • Chill the dough for 15–30 minutes if it feels too sticky to scoop.
  • Try adding a pinch of espresso powder to intensify the chocolate flavor.
  • Store cooled cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
