Description

This Easy Tater Tot Casserole is the ultimate cozy, family-friendly comfort food! Crispy golden tater tots top a hearty mix of ground beef, creamy mushroom soup, and melty cheese. It’s a one-dish wonder that’s quick to throw together and always a hit at the dinner table. Perfect for busy weeknights, potlucks, or anytime you’re craving a satisfying and simple meal.

Ingredients

  • 1 pound ground beef
  • 1/2 small onion, diced
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (about 32 ounces) frozen tater tots

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.

  • In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft. Drain any excess grease.

  • Stir in the cream of mushroom soup, sour cream, garlic powder, salt, and pepper. Mix until smooth and well combined.

  • Spread the beef mixture evenly in the prepared baking dish. Sprinkle 1 cup of shredded cheese over the top.

  • Arrange the tater tots in a single layer over the cheese.

  • Bake uncovered for 30–35 minutes or until the tater tots are crispy and golden.

  • Sprinkle the remaining 1 cup of cheese over the top and return to the oven for 5–10 more minutes, until melted and bubbly.

  • Let cool for a few minutes before serving. Enjoy!

Notes

  • Swap in cream of chicken or cheddar soup for a twist on flavor.
  • Add frozen mixed veggies or peas and carrots to the beef mixture for extra texture and nutrition.
  • Spice it up with taco seasoning, or use pepper jack cheese for a bit of heat.
  • Leftovers reheat well and can be frozen for up to 2 months.
