Description

This crustless cheesecake is intentionally burnt on top, creating a caramelized exterior with a creamy, custardy center. It’s rich, rustic, and absolutely show-stopping.


Ingredients

  • 2 lbs cream cheese, room temperature
  • 1 1/2 cups sugar
  • 6 large eggs
  • 2 cups heavy cream
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

    • Preheat oven to 425°F (220°C). Line a 9-inch springform pan with parchment paper (leave overhang).

    • Beat cream cheese and sugar until smooth.

    • Add eggs one at a time, mixing well.

    • Mix in cream, then flour, salt, and vanilla until just combined.

    • Pour batter into pan. Bake for 50–60 minutes until top is deeply golden brown.

    • Cool completely before unmolding. Chill for firmer texture.
