Description

All the fresh flavors of a Caprese salad—ripe tomatoes, basil, and mozzarella—baked into a savory, bubbly chicken casserole perfect for summer or any season.


Ingredients

    • 4 boneless chicken breasts
    • Salt and pepper, to taste
    • 1 tablespoon olive oil
    • 2 cups cherry tomatoes, halved
    • 2 cups shredded mozzarella
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup balsamic glaze or reduction
    • Fresh basil leaves, for topping

 


Instructions

  • Preheat oven to 375°F (190°C).

  • Season and sear chicken in olive oil until golden, then place in baking dish.

  • Top with tomatoes and mozzarella.

  • Bake for 20–25 minutes until chicken is cooked and cheese is bubbly.

  • Drizzle with balsamic glaze and garnish with basil before serving.
