Peanut Butter Cup Cookies are bite-sized bliss with a soft peanut butter cookie base and a melty chocolate peanut butter cup center. Perfect for parties or cookie trays!
Ingredients

- 1½ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup peanut butter
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 24 mini Reese’s peanut butter cups, unwrapped

Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.

In a bowl, whisk together flour, baking soda, and salt.

Cream butter, peanut butter, and sugars until fluffy. Add egg and vanilla.

Mix in dry ingredients until combined.

Roll into 1-inch balls and place into muffin cups. Bake for 8–10 minutes.

Immediately press a peanut butter cup into each cookie. Cool before removing.
