Description

 Peanut Butter Cup Cookies are bite-sized bliss with a soft peanut butter cookie base and a melty chocolate peanut butter cup center. Perfect for parties or cookie trays!


Ingredients

    • 1½ cups all-purpose flour
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • ½ cup unsalted butter, softened
    • ½ cup peanut butter
    • ½ cup brown sugar
    • ½ cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 24 mini Reese’s peanut butter cups, unwrapped

 


Instructions

    • Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.

    • In a bowl, whisk together flour, baking soda, and salt.

    • Cream butter, peanut butter, and sugars until fluffy. Add egg and vanilla.

    • Mix in dry ingredients until combined.

    • Roll into 1-inch balls and place into muffin cups. Bake for 8–10 minutes.

    • Immediately press a peanut butter cup into each cookie. Cool before removing.

  • Chill dough if it’s too soft to handle.
  • Store in an airtight container for up to a week.
