These Banana Streusel Muffins are moist and fluffy with a cinnamon crumb topping that adds irresistible crunch and sweetness.
Ingredients
Muffins:
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 ripe bananas, mashed
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg
- ⅓ cup melted butter
- 1 teaspoon vanilla extract
Streusel Topping:
- ¼ cup brown sugar
- ¼ cup all-purpose flour
- ½ teaspoon cinnamon
- 2 tablespoons cold butter
Instructions

Preheat oven to 350°F and line a muffin tin.

Mix flour, baking soda, and salt in a bowl.

In another bowl, combine bananas, sugars, egg, butter, and vanilla.

Add dry ingredients to wet and mix until just combined.

Divide batter among muffin cups.

For streusel, mix sugar, flour, cinnamon, and cut in butter until crumbly. Sprinkle on top.

Bake for 18–22 minutes until golden and a toothpick comes out clean.
Notes
- Add chopped nuts or mini chocolate chips for variety.
- Don’t overmix batter for soft muffins.
