Description

These Banana Streusel Muffins are moist and fluffy with a cinnamon crumb topping that adds irresistible crunch and sweetness.


Ingredients

Muffins:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 ripe bananas, mashed
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • ⅓ cup melted butter
  • 1 teaspoon vanilla extract

Streusel Topping:

  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • ½ teaspoon cinnamon
  • 2 tablespoons cold butter

Instructions

  • Preheat oven to 350°F and line a muffin tin.

  • Mix flour, baking soda, and salt in a bowl.

  • In another bowl, combine bananas, sugars, egg, butter, and vanilla.

  • Add dry ingredients to wet and mix until just combined.

  • Divide batter among muffin cups.

  • For streusel, mix sugar, flour, cinnamon, and cut in butter until crumbly. Sprinkle on top.

  • Bake for 18–22 minutes until golden and a toothpick comes out clean.
