This rich and creamy Butter Chicken is a comforting Indian-inspired dish made with tender chicken in a spiced tomato and cream sauce. Perfect with warm naan or a bowl of fluffy rice, it’s a flavorful meal that comes together easily at home.


Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 (15 oz) can tomato sauce
  • 1 cup heavy cream
  • Fresh cilantro, chopped (for garnish)

Instructions

  • In a large bowl, mix yogurt, lemon juice, cumin, garam masala, turmeric, chili powder, and salt. Add the chicken and coat well. Marinate for at least 30 minutes or overnight.

  • In a large skillet or Dutch oven, melt butter over medium heat. Add onion and sauté until soft, about 5 minutes.

  • Stir in garlic, ginger, coriander, and paprika. Cook for 1 minute until fragrant.

  • Add the marinated chicken and cook until browned on all sides.

  • Pour in the tomato sauce, bring to a simmer, and cook for 15-20 minutes, until chicken is fully cooked.

  • Stir in heavy cream and simmer for another 5 minutes until the sauce is thickened.

  • Garnish with chopped cilantro and serve with rice or naan.

Notes

  • For a dairy-free version, substitute coconut milk for heavy cream and dairy-free yogurt for the marinade.
  • Adjust the spice level by adding more or less chili powder.
  • Chicken breast can be used, but thighs yield juicier results.
