Description
These Soft Gingerbread Cookies are thick, chewy, and perfectly spiced with cinnamon, ginger, and molasses. A classic holiday cookie that stays soft for days!
Ingredients
- 3/4 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup molasses
- 1 egg
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon salt
- 1/4 cup granulated sugar (for rolling)
Instructions

Preheat oven to 350°F (175°C). Line baking sheet with parchment.

Cream butter, sugar, and molasses until light. Add egg and beat well.

In another bowl, whisk together flour, baking soda, spices, and salt.

Gradually mix dry ingredients into wet until dough forms.

Roll dough into 1-inch balls and coat in sugar.

Place on baking sheet and bake 8–10 minutes.

Let cool on pan for 5 minutes, then transfer to rack.
Notes
- Dough can be chilled for extra thick cookies.
- Great with a drizzle of icing or dipped in white chocolate.
