Description

These Soft Gingerbread Cookies are thick, chewy, and perfectly spiced with cinnamon, ginger, and molasses. A classic holiday cookie that stays soft for days!


Ingredients

  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for rolling)

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheet with parchment.

  • Cream butter, sugar, and molasses until light. Add egg and beat well.

  • In another bowl, whisk together flour, baking soda, spices, and salt.

  • Gradually mix dry ingredients into wet until dough forms.

  • Roll dough into 1-inch balls and coat in sugar.

  • Place on baking sheet and bake 8–10 minutes.

  • Let cool on pan for 5 minutes, then transfer to rack.

Notes

  • Dough can be chilled for extra thick cookies.
  • Great with a drizzle of icing or dipped in white chocolate.
