Ingredients

  • 23 pound beef tenderloin, trimmed
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons butter, melted

Instructions

  • Preheat oven to 450°F (230°C). Tie beef with butcher’s twine for even roasting.

  • In a small bowl, mix garlic, herbs, salt, pepper, olive oil, and melted butter.

  • Rub mixture all over the tenderloin.
