Quick, colorful, and packed with bold flavor, this Chicken Stir Fry is an easy weeknight meal that’s ready in under 30 minutes. Crisp veggies, tender chicken, and a savory stir fry sauce—delicious over rice or noodles.


Ingredients

  • 1 pound chicken breast, sliced thin
  •  
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger

Instructions

    • Toss sliced chicken with soy sauce and cornstarch; let sit for 10 minutes.

    • In a small bowl, mix all sauce ingredients until smooth.

    • Heat oil in a skillet over medium-high heat. Add chicken and cook until browned, 5–6 minutes.

    • Add garlic, ginger, and vegetables. Stir fry for 3–4 minutes.

    • Pour in sauce and cook until thickened and everything is coated.

    • Serve hot over rice or noodles.
