Description
These hearty beef enchiladas are filled with seasoned ground beef, smothered in rich red enchilada sauce, and topped with gooey melted cheese. The ultimate Tex-Mex comfort meal!
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (10 oz) red enchilada sauce
- 8 flour tortillas (8-inch)
- 2 cups shredded Mexican blend cheese
- Optional toppings: sour cream, chopped cilantro, sliced jalapeños
Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned. Drain excess grease.

Stir in taco seasoning and water. Simmer for 5 minutes.

Spread 1/4 cup enchilada sauce in the bottom of the baking dish.

Fill each tortilla with a few spoonfuls of beef and some cheese. Roll up and place seam-side down in the dish.

Pour remaining sauce over the top and sprinkle with the rest of the cheese.

Bake for 20–25 minutes, until bubbly and cheese is melted.

Garnish with toppings before serving.
Notes
- Swap beef for shredded chicken or beans for a different twist.
- Use homemade enchilada sauce if preferred.
