Description

 

These hearty beef enchiladas are filled with seasoned ground beef, smothered in rich red enchilada sauce, and topped with gooey melted cheese. The ultimate Tex-Mex comfort meal!


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10 oz) red enchilada sauce
  • 8 flour tortillas (8-inch)
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  • In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned. Drain excess grease.

  • Stir in taco seasoning and water. Simmer for 5 minutes.

  • Spread 1/4 cup enchilada sauce in the bottom of the baking dish.

  • Fill each tortilla with a few spoonfuls of beef and some cheese. Roll up and place seam-side down in the dish.

  • Pour remaining sauce over the top and sprinkle with the rest of the cheese.

  • Bake for 20–25 minutes, until bubbly and cheese is melted.

  • Garnish with toppings before serving.

Notes

  • Swap beef for shredded chicken or beans for a different twist.
  • Use homemade enchilada sauce if preferred.
  • Freeze before baking for a quick future meal.
