Description
This Deli Style Roast Beef is tender, perfectly seasoned, and thinly sliced—just like your favorite sandwich shop, but homemade.
Ingredients
- 3 lb eye of round roast
- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
Instructions

Preheat oven to 500°F (260°C).

Rub roast with olive oil and season with spices.

Place on a rack in a roasting pan.

Roast for 5 minutes per pound, then turn off oven and leave roast inside for 2 hours. Do not open the door.

Remove and let rest before slicing thinly.
