This Deli Style Roast Beef is tender, perfectly seasoned, and thinly sliced—just like your favorite sandwich shop, but homemade.


Ingredients

  • 3 lb eye of round roast
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika

Instructions

  • Preheat oven to 500°F (260°C).

  • Rub roast with olive oil and season with spices.

  • Place on a rack in a roasting pan.

  • Roast for 5 minutes per pound, then turn off oven and leave roast inside for 2 hours. Do not open the door.

  • Remove and let rest before slicing thinly.

  • Perfect for sandwiches, wraps, or serving with mashed potatoes. Store slices in the fridge for up to 5 days.
