Description

Hearty and warming, this Beef Barley Stew is the ultimate cozy meal with tender beef, vegetables, and chewy barley in a savory broth.


Ingredients

  • 1 lb beef stew meat
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1/2 cup pearl barley
  • 6 cups beef broth
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  • In a large pot, brown beef in olive oil. Remove and set aside.
  • Sauté onion, garlic, carrots, and celery until softened.
  • Return beef to the pot. Add barley, broth, thyme, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce to a simmer for 1 to 1.5 hours, until beef is tender and barley is cooked.
  • Remove bay leaf and serve hot.

Notes

  • Leftovers taste even better the next day. Add mushrooms or potatoes for variation.
