Hearty and warming, this Beef Barley Stew is the ultimate cozy meal with tender beef, vegetables, and chewy barley in a savory broth.
Ingredients
- 1 lb beef stew meat
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1/2 cup pearl barley
- 6 cups beef broth
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, brown beef in olive oil. Remove and set aside.
- Sauté onion, garlic, carrots, and celery until softened.
- Return beef to the pot. Add barley, broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce to a simmer for 1 to 1.5 hours, until beef is tender and barley is cooked.
- Remove bay leaf and serve hot.
Notes
- Leftovers taste even better the next day. Add mushrooms or potatoes for variation.
