This Easy Asparagus Casserole is creamy, cheesy, and loaded with fresh asparagus—perfect as a spring side dish or cozy veggie-packed entrée.
Ingredients
- 1 bunch fresh asparagus trimmed and chopped
- 1 can cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup crushed Ritz crackers
- 2 tablespoons melted butter
Instructions

Preheat oven to 350°F and grease a baking dish

In a bowl, mix soup, sour cream, cheese, garlic powder, salt, and pepper

Add chopped asparagus and stir to coat

Pour mixture into the baking dish

Mix crushed crackers with melted butter and sprinkle on top

Bake for 25–30 minutes until bubbly and golden
