Ingredients

  • 3 lb beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion quartered
  • 4 carrots chopped
  • 3 potatoes chopped
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Sear roast in olive oil in a large skillet

  • Add roast to slow cooker with onion, carrots, and potatoes

  • In a bowl, whisk broth, tomato paste, rosemary, garlic powder, salt, and pepper

  • Pour mixture over the meat and vegetables
