Instructions
- Preheat oven to 425°F.
- Scrub and dry the potatoes thoroughly.
- Prick each potato several times with a fork.
- Rub each with olive oil, then sprinkle with salt, pepper, and optional garlic powder.
- Place directly on the oven rack and bake for 45–60 minutes until crispy outside and tender inside.
- Let cool slightly before slicing open and adding toppings.
Notes
- For extra crispiness, skip the foil and bake directly on the rack. Add toppings like sour cream, cheese, bacon, or chives for loaded potatoes.
