These crockpot black bean burritos and rice are a budget-friendly, protein-packed meal with bold Mexican flavors and easy hands-off prep.
Ingredients
- Black beans, drained and rinsed
- Uncooked long-grain rice
- Diced tomatoes with green chilies
- Vegetable broth
- Corn kernels
- Onion, chopped
- Taco seasoning
- Salt
- Flour tortillas
- Shredded cheese
- Sour cream or salsa (optional for serving)
Instructions
- Add beans, rice, tomatoes, broth, corn, onion, seasoning, and salt to the crockpot.
- Stir and cover.
- Cook on low for 4–5 hours until rice is tender.
- Scoop mixture into tortillas, add cheese, and roll up into burritos.
- Serve with salsa or sour cream.
Notes
- Use brown rice for added fiber or top with avocado for creaminess. Can be made into a burrito bowl too!
