Description

These crockpot black bean burritos and rice are a budget-friendly, protein-packed meal with bold Mexican flavors and easy hands-off prep.


Ingredients

  • Black beans, drained and rinsed
  • Uncooked long-grain rice
  • Diced tomatoes with green chilies
  • Vegetable broth
  • Corn kernels
  • Onion, chopped
  • Taco seasoning
  • Salt
  • Flour tortillas
  • Shredded cheese
  • Sour cream or salsa (optional for serving)

Instructions

  • Add beans, rice, tomatoes, broth, corn, onion, seasoning, and salt to the crockpot.
  • Stir and cover.
  • Cook on low for 4–5 hours until rice is tender.
  • Scoop mixture into tortillas, add cheese, and roll up into burritos.
  • Serve with salsa or sour cream.

Notes

  • Use brown rice for added fiber or top with avocado for creaminess. Can be made into a burrito bowl too!
