Ingredients
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- 2 eggs
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 cup grated carrots
- ½ cup crushed pineapple, drained
- ½ cup chopped walnuts
Cheesecake Layer
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 egg
- ½ teaspoon vanilla extract
Instructions

Preheat oven to 350°F. Grease a springform pan.

In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

In another bowl, beat eggs, oil, sugars, carrots, pineapple, and walnuts. Combine with dry ingredients.

In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.

Pour carrot cake batter into pan. Gently spoon cheesecake layer over the top.

Bake for 50–60 minutes or until center is set. Cool and chill before serving.
Notes
