Description

Two beloved desserts in one—Carrot Cake Cheesecake layers a moist spiced carrot cake base with rich, creamy cheesecake for an indulgent and festive treat.


Ingredients

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 eggs
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 cup grated carrots
  • ½ cup crushed pineapple, drained
  • ½ cup chopped walnuts

Cheesecake Layer

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 egg
  • ½ teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F. Grease a springform pan.

  • In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  • In another bowl, beat eggs, oil, sugars, carrots, pineapple, and walnuts. Combine with dry ingredients.

  • In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.

  • Pour carrot cake batter into pan. Gently spoon cheesecake layer over the top.

  • Bake for 50–60 minutes or until center is set. Cool and chill before serving.
