Ingredients
- 1 cup uncooked quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, finely chopped
- ⅓ cup kalamata olives, sliced
- ½ cup crumbled feta cheese
- ¼ cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon red wine vinegar
- Salt and pepper to taste
Instructions

Rinse quinoa and cook with water according to package instructions. Let cool.

In a large bowl, combine cooked quinoa, tomatoes, cucumber, red onion, olives, feta, and parsley.
