This one-pan creamy garlic shrimp is indulgently creamy without the dairy—made with coconut milk and garlic for a rich, savory seafood dish in just 20 minutes.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1 cup full-fat coconut milk
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped parsley, for garnish

Instructions

    • Heat olive oil in a skillet over medium heat.

    • Add garlic and sauté until fragrant, about 1 minute.

    • Add shrimp, season with paprika, salt, and pepper. Cook 2–3 minutes per side until opaque.

    • Stir in coconut milk and bring to a simmer.

    • Add lemon juice, stir, and cook 2–3 more minutes until sauce thickens slightly.

    • Garnish with parsley and serve hot.
