Description

This fresh and flavorful grilled shrimp bowl is paired with roasted asparagus and a dreamy creamy garlic sauce—an easy, elegant meal perfect for lunch or dinner.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/4 teaspoon dill
  • 1 cup cooked rice or quinoa, for serving

Instructions

    • Preheat grill or grill pan over medium heat.

    • Toss shrimp and asparagus with olive oil, salt, and pepper.

    • Grill shrimp 2–3 minutes per side until opaque and slightly charred. Grill asparagus until tender, about 5–7 minutes.

    • In a bowl, mix Greek yogurt, lemon juice, garlic powder, and dill to create creamy garlic sauce.

    • Assemble bowls with rice, shrimp, grilled asparagus, and a drizzle of sauce.
