Packed with classic Tex-Mex flavor, this easy chicken burrito casserole is loaded with shredded chicken, beans, cheese, and salsa, layered with tortillas for a baked dish the whole family will crave. Perfect for busy weeknights or casual entertaining.
Ingredients
- 3 cups cooked shredded chicken
- 1 can black beans drained and rinsed
- 1 cup cooked rice
- 1 cup salsa
- 1 cup sour cream
- 1 packet taco seasoning
- 2 cups shredded Mexican cheese blend
- 6 large flour tortillas
- Fresh cilantro and diced tomatoes for topping
Instructions
- Preheat oven to 375°F.
- In a large bowl, combine chicken, black beans, rice, salsa, sour cream, and taco seasoning.
- Grease a 9×13-inch baking dish and layer two tortillas on the bottom.
- Spread a third of the chicken mixture over tortillas and sprinkle with cheese. Repeat layers, ending with cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10–15 minutes until bubbly and golden.
- Top with fresh cilantro and diced tomatoes before serving.
Notes
- Swap in corn tortillas for a gluten-free version. Add jalapeños or hot sauce for a spicy twist.
