Ingredients
- 1 lb ground turkey
- 2 large sweet potatoes peeled and cubed
- 1 small onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded cheddar cheese
- ½ cup milk
- 2 eggs beaten
Instructions
- Preheat oven to 375°F.
- Toss cubed sweet potatoes with olive oil, salt, pepper, and paprika. Roast on a baking sheet for 20 minutes.
- Meanwhile, cook ground turkey and onion in a skillet until turkey is browned. Add garlic and thyme; cook 1 minute.
- In a bowl, whisk milk and eggs.
- In a greased 9×9-inch dish, layer sweet potatoes and turkey mixture. Pour egg mixture over and top with cheese.
- Bake for 20–25 minutes, until set and golden.
