Ingredients
- 4 cups yellow squash sliced
- 1 small onion chopped
- 2 tablespoons butter
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 egg beaten
- 1 sleeve buttery crackers crushed
- 2 tablespoons melted butter
Instructions
- Preheat oven to 350°F.
- In a skillet over medium heat, melt 2 tablespoons butter. Add squash and onion, cooking until tender, about 8–10 minutes. Drain any excess liquid.
- In a large bowl, combine cooked squash mixture, cheddar cheese, sour cream, salt, pepper, and beaten egg. Mix until well combined.
- Transfer mixture to a greased 8×8-inch baking dish.
- Top with crushed crackers and drizzle with melted butter.
- Bake for 25–30 minutes, until golden brown and bubbly.
