Description

Ingredients

  • 4 cups yellow squash sliced
  • 1 small onion chopped
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg beaten
  • 1 sleeve buttery crackers crushed
  • 2 tablespoons melted butter

Instructions

  • Preheat oven to 350°F.
  • In a skillet over medium heat, melt 2 tablespoons butter. Add squash and onion, cooking until tender, about 8–10 minutes. Drain any excess liquid.
  • In a large bowl, combine cooked squash mixture, cheddar cheese, sour cream, salt, pepper, and beaten egg. Mix until well combined.
  • Transfer mixture to a greased 8×8-inch baking dish.
  • Top with crushed crackers and drizzle with melted butter.
  • Bake for 25–30 minutes, until golden brown and bubbly.

Notes

  • For a deeper flavor, add a pinch of garlic powder or a dash of hot sauce. Use Ritz crackers for a rich, buttery topping.
