This one-pan ground turkey and sweet potato taco skillet is flavorful, fast, and nutritious. It’s perfect for meal prep or a quick dinner, with seasoned turkey, sweet potatoes, and black beans all simmered in a savory blend of spices.
Ingredients
- 1 lb ground turkey
- 2 cups diced sweet potatoes
- 1 tablespoon olive oil
- 1 small onion diced
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- 1 can black beans drained and rinsed
- ½ cup salsa
- ¼ cup water
- Chopped cilantro and lime wedges for serving
Instructions
- In a large skillet over medium heat, cook ground turkey until browned. Remove and set aside.
- Add olive oil to the skillet, then cook sweet potatoes and onions until softened, about 8–10 minutes.
- Return turkey to the skillet. Stir in garlic powder, cumin, chili powder, paprika, salt, black beans, salsa, and water.
- Cover and simmer for 10–12 minutes, until sweet potatoes are tender and mixture is heated through.
- Garnish with chopped cilantro and a squeeze of lime.
Notes
- For extra heat, add jalapeños or red pepper flakes.
- Serve in bowls, tacos, or over rice.
