Description

This one-pan ground turkey and sweet potato taco skillet is flavorful, fast, and nutritious. It’s perfect for meal prep or a quick dinner, with seasoned turkey, sweet potatoes, and black beans all simmered in a savory blend of spices.


Ingredients

  • 1 lb ground turkey
  • 2 cups diced sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • 1 can black beans drained and rinsed
  • ½ cup salsa
  • ¼ cup water
  • Chopped cilantro and lime wedges for serving

Instructions

  • In a large skillet over medium heat, cook ground turkey until browned. Remove and set aside.
  • Add olive oil to the skillet, then cook sweet potatoes and onions until softened, about 8–10 minutes.
  • Return turkey to the skillet. Stir in garlic powder, cumin, chili powder, paprika, salt, black beans, salsa, and water.
  • Cover and simmer for 10–12 minutes, until sweet potatoes are tender and mixture is heated through.
  • Garnish with chopped cilantro and a squeeze of lime.

Notes

  • For extra heat, add jalapeños or red pepper flakes.
