Description

Everything you love about pecan pie packed into bite-sized cookies. Buttery, nutty, and rich with warm brown sugar flavor—perfect for fall baking!


Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pecans
  • 2 tablespoons corn syrup
  • 2 tablespoons brown sugar (for filling)

Instructions

  • Preheat oven to 350°F (175°C).

  • Cream butter and brown sugar until fluffy. Mix in egg yolk and vanilla.

  • Stir in flour and salt to form dough.

  • Roll into balls and create a small well in the center of each.

  • Mix pecans, corn syrup, and brown sugar. Spoon filling into cookie centers.

  • Bake for 12–14 minutes. Cool on a wire rack.

Notes

  • Chill dough for 20 minutes for easier handling. Add a dash of cinnamon for warmth.
