Ingredients
- 3 cups cooked shredded chicken
- 1 cup cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 can (10 oz) enchilada sauce
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups shredded cheddar or Mexican blend cheese
- Tortilla chips, sour cream, and chopped cilantro, for serving
Instructions

Preheat oven to 375°F (190°C).

In a large bowl, mix chicken, rice, black beans, corn, enchilada sauce, salsa, chili powder, and cumin until well combined.

Pour mixture into a greased 9×13-inch baking dish. Top with shredded cheese.

Bake for 20–25 minutes, until cheese is bubbly and melted.
