All the bold flavors of your favorite burrito layered in one bubbly, cheesy, comforting dish—this Easy Chicken Burrito Casserole is the ultimate weeknight dinner!


Ingredients

  • 3 cups cooked shredded chicken
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (10 oz) enchilada sauce
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded cheddar or Mexican blend cheese
  • Tortilla chips, sour cream, and chopped cilantro, for serving

Instructions

  • Preheat oven to 375°F (190°C).

  • In a large bowl, mix chicken, rice, black beans, corn, enchilada sauce, salsa, chili powder, and cumin until well combined.

  • Pour mixture into a greased 9×13-inch baking dish. Top with shredded cheese.

  • Bake for 20–25 minutes, until cheese is bubbly and melted.

  • Let sit for 5 minutes, then serve with chips, sour cream, and cilantro.
