Ingredients
- 1 cup unsalted butter, softened
- ⅔ cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- Pinch of salt
- Extra sugar, for sprinkling (optional)
Instructions

In a large bowl, cream butter and sugar until light and fluffy. Mix in egg yolk and vanilla.

Gradually add flour and salt, mixing until a soft dough forms.

Shape into a log, wrap in plastic, and refrigerate for 1 hour.

Preheat oven to 350°F (175°C). Slice chilled dough into ¼-inch rounds.

Place on a parchment-lined baking sheet and sprinkle with sugar if desired.

Bake for 10–12 minutes or until edges are lightly golden. Cool before serving.
