Delicate, buttery, and melt-in-your-mouth tender—these French Butter Cookies (also known as Sablés) are a timeless treat with crisp edges and rich flavor.


Ingredients

  • 1 cup unsalted butter, softened
  • ⅔ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • Pinch of salt
  • Extra sugar, for sprinkling (optional)

Instructions

  • In a large bowl, cream butter and sugar until light and fluffy. Mix in egg yolk and vanilla.

  • Gradually add flour and salt, mixing until a soft dough forms.

  • Shape into a log, wrap in plastic, and refrigerate for 1 hour.

  • Preheat oven to 350°F (175°C). Slice chilled dough into ¼-inch rounds.

  • Place on a parchment-lined baking sheet and sprinkle with sugar if desired.

  • Bake for 10–12 minutes or until edges are lightly golden. Cool before serving.
