This Mediterranean Salmon is bursting with bright flavors from lemon, garlic, herbs, and olives—quick to make and perfect for a wholesome, nourishing meal.
Ingredients
- 4 salmon fillets
- 3 tablespoons olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- ½ cup cherry tomatoes, halved
- ¼ cup kalamata olives, sliced
- ¼ cup red onion, thinly sliced
- Fresh parsley, for garnish
Instructions

Preheat oven to 400°F (200°C). Line a baking dish with parchment.

In a small bowl, whisk olive oil, lemon juice, garlic, oregano, basil, salt, and pepper.

Place salmon in the dish and brush with marinade. Top with tomatoes, olives, and onion.

Bake for 12–15 minutes or until salmon flakes easily with a fork.
