Description

This Mediterranean Salmon is bursting with bright flavors from lemon, garlic, herbs, and olives—quick to make and perfect for a wholesome, nourishing meal.


Ingredients

  • 4 salmon fillets
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • ½ cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • ¼ cup red onion, thinly sliced
  • Fresh parsley, for garnish

Instructions

  • Preheat oven to 400°F (200°C). Line a baking dish with parchment.

  • In a small bowl, whisk olive oil, lemon juice, garlic, oregano, basil, salt, and pepper.

  • Place salmon in the dish and brush with marinade. Top with tomatoes, olives, and onion.

  • Bake for 12–15 minutes or until salmon flakes easily with a fork.

  • Garnish with fresh parsley before serving.
