Description
Hearty, flavorful, and made in a single pan, this One Pot Mexican Rice Casserole is the perfect blend of seasoned ground beef, rice, beans, and melty cheese.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 cup long-grain white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 ½ cups beef broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheddar cheese
- Chopped green onions and cilantro, for topping
Instructions

Heat oil in a large skillet over medium heat. Cook ground beef and onion until browned. Add garlic and stir.

Stir in rice, beans, diced tomatoes, broth, cumin, and chili powder. Bring to a boil.

Cover, reduce heat, and simmer for 18–20 minutes, or until rice is tender.

Uncover and top with cheese. Cover again to melt the cheese, or broil for 2 minutes.

Garnish with green onions and cilantro.
