Description

 Hearty, flavorful, and made in a single pan, this One Pot Mexican Rice Casserole is the perfect blend of seasoned ground beef, rice, beans, and melty cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 ½ cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheddar cheese
  • Chopped green onions and cilantro, for topping

Instructions

  • Heat oil in a large skillet over medium heat. Cook ground beef and onion until browned. Add garlic and stir.

  • Stir in rice, beans, diced tomatoes, broth, cumin, and chili powder. Bring to a boil.

  • Cover, reduce heat, and simmer for 18–20 minutes, or until rice is tender.

  • Uncover and top with cheese. Cover again to melt the cheese, or broil for 2 minutes.

  • Garnish with green onions and cilantro.

  • Easily adaptable with ground turkey or veggie crumbles.
  • Spice it up with jalapeños or hot sauce.
