Banana Streusel Muffins are soft, moist, and topped with a sweet crumbly streusel for the perfect breakfast treat or afternoon snack.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 ripe bananas, mashed
- 3/4 cup sugar
- 1/3 cup butter, melted
- 1 egg
- 1 teaspoon vanilla extract
Instructions

Preheat oven to 375°F (190°C) and line a muffin tin.

In a large bowl, mix flour, baking powder, baking soda, and salt.

In another bowl, combine mashed bananas, sugar, butter, egg, and vanilla.

Add wet ingredients to dry and mix until just combined.

Fill muffin cups and top with streusel.

Bake for 18–20 minutes until golden.
Notes
- Use very ripe bananas for best flavor
- Don’t overmix the batter
- Add nuts or chocolate chips if desired
- Freeze leftovers for quick breakfasts
