Loaded with colorful veggies and cheesy goodness, this Vegetable Casserole is a delicious way to enjoy a wholesome, comforting side dish or light main meal.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup crushed buttery crackers
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C).
  • Lightly steam broccoli, cauliflower, and carrots until just tender.
  • In a bowl, mix cream of mushroom soup, sour cream, salt, and pepper.
  • Combine veggies and sauce; mix well.
  • Transfer to a greased 9×13-inch baking dish.
  • Top with shredded cheddar cheese.
  • Mix crushed crackers with melted butter and sprinkle over the top.
  • Bake for 30–35 minutes until golden and bubbly.
