Description

Packed with lean ground beef, zucchini, tomatoes, and herbs, this Mediterranean stir-fry is a fresh and flavorful low-carb dinner ready in 25 minutes.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Juice of half a lemon
  • Crumbled feta and parsley, for garnish

Instructions

    • Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.

    • Add onion and garlic, sauté until translucent.

    • Stir in zucchini and tomatoes. Cook for 5–6 minutes until vegetables soften.

    • Season with oregano, cumin, salt, and pepper.

    • Finish with lemon juice and garnish with crumbled feta and parsley.

 

Notes

  • Great served over couscous or rice, or in lettuce wraps.
  • Add spinach or chopped kale for more greens.
  • Use ground lamb for a richer Mediterranean flavor.
