Description

A comforting classic with bold flavors, these cheesy ground beef enchiladas are packed with seasoned beef, smothered in enchilada sauce, and baked to melty perfection.


Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 8 flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 2 cups red enchilada sauce
  • Fresh cilantro, for garnish

Instructions

  • Preheat oven to 375°F (190°C).

  • In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.

  • Stir in garlic powder, cumin, chili powder, paprika, salt, and pepper.

  • Spread a spoonful of enchilada sauce in a baking dish.

  • Fill each tortilla with beef and a sprinkle of cheese, roll up, and place seam-side down.

  • Pour remaining sauce over the top and cover with remaining cheese.

  • Bake uncovered for 20 minutes or until bubbly.

  • Garnish with cilantro before serving.
