A comforting classic with bold flavors, these cheesy ground beef enchiladas are packed with seasoned beef, smothered in enchilada sauce, and baked to melty perfection.
Ingredients
- 1 lb ground beef
- 1 small onion, finely chopped
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 8 flour tortillas
- 2 cups shredded Mexican cheese blend
- 2 cups red enchilada sauce
- Fresh cilantro, for garnish
Instructions

Preheat oven to 375°F (190°C).

In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.

Stir in garlic powder, cumin, chili powder, paprika, salt, and pepper.

Spread a spoonful of enchilada sauce in a baking dish.

Fill each tortilla with beef and a sprinkle of cheese, roll up, and place seam-side down.

Pour remaining sauce over the top and cover with remaining cheese.

Bake uncovered for 20 minutes or until bubbly.
