Description

These Easy Birria Tacos are cheesy, crispy, and deeply flavorful with tender beef stewed in a rich Mexican chili broth. Dip, bite, repeat!


Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 small onion, chopped
  • 4 garlic cloves
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon cinnamon
  • 2 cups beef broth
  • Corn tortillas
  • 1 cup shredded mozzarella or Oaxaca cheese
  • Salt and pepper to taste

Instructions

  • Soak dried chiles in hot water for 15 minutes.
  • Blend chiles with onion, garlic, cumin, oregano, cinnamon, and a bit of broth to create a sauce.
  • Sear beef in a pot, then pour in the sauce and remaining broth.
  • Simmer covered for 2.5 hours until beef is tender. Shred the beef.
  • Dip tortillas in broth, fill with beef and cheese, and cook on a skillet until crispy.
  • Serve with a side of consommé for dipping.

  • Add a splash of vinegar or lime juice to balance richness.
