Description
This Classic Mustard Potato Salad is bold, creamy, and bright with zippy yellow mustard and the perfect touch of crunch from fresh veggies.
Ingredients
- 2 lbs red potatoes, chopped
- 3 eggs, hard-boiled and diced
- 1/2 cup mayonnaise
- 1/4 cup yellow mustard
- 1/4 cup chopped pickles or relish
- 1/4 cup chopped red onion
- 1/4 cup diced celery
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Boil potatoes until tender, about 10-12 minutes. Drain and let cool.
- In a large bowl, mix mayo, mustard, pickles, onion, celery, salt, and pepper.
- Fold in potatoes and eggs until combined.
- Chill for 1-2 hours before serving.
- Garnish with a sprinkle of paprika.
