Rich and decadent, these vegan brownie cookies have a crispy edge and a gooey chocolate center that’s totally irresistible.
Ingredients
- 1 cup flour
- 1/2 cup cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup coconut oil, melted
- 1/2 cup brown sugar
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1/2 cup vegan chocolate chips
Instructions

Preheat oven to 350°F (175°C). Line a baking sheet.

Whisk together flour, cocoa, baking powder, and salt.

In another bowl, mix oil, sugar, milk, and vanilla.

Combine wet and dry, fold in chocolate chips.

Scoop onto baking sheet and press slightly.

Bake 10–12 minutes until edges are set. Let cool fully.
Notes
- Don’t overbake to keep centers fudgy.
- Great with a sprinkle of sea salt on top.
