Description

Rich and decadent, these vegan brownie cookies have a crispy edge and a gooey chocolate center that’s totally irresistible.


Ingredients

  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet.

  • Whisk together flour, cocoa, baking powder, and salt.

  • In another bowl, mix oil, sugar, milk, and vanilla.

  • Combine wet and dry, fold in chocolate chips.

  • Scoop onto baking sheet and press slightly.

  • Bake 10–12 minutes until edges are set. Let cool fully.

Notes

  • Don’t overbake to keep centers fudgy.
  • Great with a sprinkle of sea salt on top.
  • Store in airtight container for 4 days.
