Description

This Starbucks Copycat Lemon Loaf is soft, sweet, and packed with bright lemon flavor, topped with a zesty glaze for that perfect coffee shop finish.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 1/3 cup sour cream
  • 1/2 cup vegetable oil
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  • Preheat oven to 350°F and grease a loaf pan.
  • In a bowl, combine flour, baking powder, baking soda, and salt.
  • In another bowl, beat eggs and sugar until fluffy.
  • Add sour cream, oil, lemon zest, juice, and vanilla. Mix well.
  • Slowly mix in dry ingredients until just combined.
  • Pour into pan and bake 45-50 minutes. Let cool.
  • Whisk glaze ingredients and pour over cooled loaf.
