Description
This Loaded Potato Salad has all the flavors of a loaded baked potato—bacon, cheddar, sour cream, and green onions—all in one irresistible side dish.
Ingredients
- 2 lbs baby red potatoes, halved
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/2 cup chopped cooked bacon
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Boil potatoes until fork-tender, about 12-15 minutes. Drain and cool.
- In a bowl, combine sour cream, mayo, salt, and pepper.
- Fold in potatoes, cheese, bacon, and green onions.
- Chill for at least 1 hour before serving.
Notes
- Add diced pickles for tang or jalapeños for heat.
- Best served cold or at room temperature.
