Description
This light asparagus salad combines tender stalks with lemon, herbs, and shaved parmesan for a crisp and elegant bite.
Ingredients
- 1 bunch asparagus, trimmed and blanched
- 1/4 red onion, sliced thin
- 1/4 cup shaved parmesan
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Chopped parsley for garnish
Instructions

Blanch asparagus until just tender, then transfer to an ice bath.

Slice into bite-sized pieces and place in a bowl with onion and parmesan.
