This refreshing cucumber salad brings together tangy olives, creamy feta, and crisp veggies in a lemony vinaigrette.
Ingredients
- 2 cucumbers, sliced thin
- 1/2 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, halved
- 1/4 cup crumbled feta
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Juice of 1/2 lemon
- Salt and oregano to taste
Instructions

In a bowl, mix cucumbers, onion, tomatoes, olives, and feta.
