Ingredients

  • 3 ripe peaches, sliced
  • 1 cup crumbled feta cheese
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 cups arugula or baby greens
  • 2 tbsp olive oil
  • 1 tbsp balsamic glaze
  • Salt and pepper to taste

Instructions

  • In a large bowl, toss together sliced peaches, feta, red onion, mint, and arugula.

  • Drizzle with olive oil and season with salt and pepper.

  • Gently mix, then finish with a drizzle of balsamic glaze just before serving.
