Ingredients
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper (red or green), diced
- 1 small red onion, thinly sliced
- 1 cup Kalamata olives, pitted
- 8 ounces feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
- Pour the dressing over the salad ingredients and toss gently to combine.
- Sprinkle the crumbled feta cheese on top of the salad.
- Serve immediately or let it chill in the refrigerator for about 30 minutes to allow the flavors to meld.
