Ingredients
- 2 cups romaine lettuce, chopped
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 cup bell pepper, diced (any color)
- 1 cup shredded carrots
- 1/2 cup red onion, thinly sliced
- 1/2 cup radishes, sliced
- 1/4 cup sunflower seeds
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the romaine lettuce, cucumber, cherry tomatoes, bell pepper, shredded carrots, red onion, radishes, and sunflower seeds. Toss gently to mix the vegetables evenly.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss to coat all the ingredients evenly.
- If using, sprinkle the feta cheese on top of the salad before serving.
- Serve immediately or chill in the refrigerator for about 30 minutes to enhance the flavors.
