Description
A refreshing and colorful Asian Chopped Salad with a flavorful sesame dressing, perfect for a light meal or side dish.
Ingredients
- 2 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1 cup bell pepper, diced (any color)
- 1 cup cucumber, diced
- 1/2 cup green onions, sliced
- 1/2 cup cilantro, chopped
- 1/4 cup sesame seeds, toasted
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon sesame seeds
Instructions
- In a large bowl, combine the green cabbage, red cabbage, carrots, bell pepper, cucumber, green onions, and cilantro. Toss well to mix all the vegetables evenly.
- In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, ginger, garlic, and sesame seeds until well combined.
- Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Just before serving, sprinkle the toasted sesame seeds on top for added crunch.
Notes
- For added protein, consider adding grilled chicken, tofu, or edamame to the salad.
- Feel free to customize the vegetables based on your preference or seasonal availability, such as adding snap peas or radishes for extra crunch.
