Description

A refreshing and colorful Asian Chopped Salad with a flavorful sesame dressing, perfect for a light meal or side dish.


Ingredients

  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup bell pepper, diced (any color)
  • 1 cup cucumber, diced
  • 1/2 cup green onions, sliced
  • 1/2 cup cilantro, chopped
  • 1/4 cup sesame seeds, toasted
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon sesame seeds

Instructions

  1. In a large bowl, combine the green cabbage, red cabbage, carrots, bell pepper, cucumber, green onions, and cilantro. Toss well to mix all the vegetables evenly.
  2. In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, ginger, garlic, and sesame seeds until well combined.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
  5. Just before serving, sprinkle the toasted sesame seeds on top for added crunch.
